High N' Wicked No. 2, The Wild Rover, is an Irish single malt bottled at a cask strength of 58.7% ABV. It is the second numbered release from High N' Wicked, a bottler based in Jackson, Wyoming, and the whiskey comes from Royal Oak Distillery in County Carlow.
Triple-distilled in copper pot stills from malted barley, it was aged in first-fill ex-bourbon barrels and then finished for eight months in 300-litre Pedro Ximénez sherry casks. It is non-chill filtered.
The nose offers chocolate truffles dusted with dark cocoa, crème fraîche and slivered almonds. On the palate come pancakes with barrel-aged maple syrup and pink peppercorn, and the finish brings tuile biscuits with pastry cream and a lift of kumquat.
