The Wild Rover is a cask strength Irish single malt from High N' Wicked, distilled at Royal Oak Distillery in County Carlow and bottled at 58.7% in a 750ml bottle. It is made from 100% malted barley and triple distilled. The whiskey matures in ex-bourbon barrels, then spends eight months in 300-litre Pedro Ximénez sherry casks. It is bottled without chill filtration.
The nose is dry cacao and molasses with cracked pepper, vanilla, damp grass, soft oak and ripe pear. The palate opens with honey, vanilla and caramel, then raisin, fig, chocolate and baking spice. The finish is long and warming, with oak, dried fruit, peppery heat and a little cocoa.
