High West Yippee Ki-Yay is a seasonal limited release from High West Distillery in Park City, Utah. It is a blended straight whiskey of aged straight rye whiskeys and a straight bourbon, finished in French oak barrels that previously held Syrah and Sauternes wine.
The Syrah casks add dark fruit and subtle tannin, while the Sauternes casks bring honey, apricot and sweet dessert-wine character.
The nose offers dried fruit, honey and toasted vanilla. The palate is rich and layered, with rye spice, dried apricot, honey, baking spice and caramel. The finish is long and warm, spice leading, with fruit and tannin lingering.
