Highland Park – Valfather (70cl, 47%)

Highland Park Valfather is an Orkney single malt, bottled at 47% in a 70cl bottle. It is the distillery's peatiest whisky to date and the final release in the Viking Legend series, named after Odin, the All Father of Norse legend. It is matured entirely in refill casks, so the smoke is not masked by heavy wood. The peat is Orkney peat, rich in heather, and the smoke is sweet and fragrant rather than medicinal. The bottle was designed by Danish designer Jim Lyngvild. The nose offers sweet smoke, fresh heather and subtle citrus over toasted oak. The palate shows charred driftwood, vanilla cream, dark chocolate and black pepper, and the finish is long and smoky with a trace of sea salt.
