This is a 3 year old Australian single malt from Highwayman of Byron Bay, distilled in 2021 and drawn from a single first fill bourbon barrel. It is release 11 of the Cut Your Wolf Loose series, bottled at 54.4% ABV in a 70cl bottle, with 98 bottles produced.
The label carries artwork by Mr Zero. Highwayman is a small batch producer founded by Dan Woolley, a long-time whisky ambassador in Australia.
The nose suggests an old country house, with wood polish, a little mustiness and a hint of strawberry. The palate is oak and dark chocolate with strong espresso, followed by smoke, and the finish is very long, ending on apple skin.
