Hobart – Pedro Ximénez Solera Tasmanian Whisky (50cl)

Pedro Ximénez Solera is a Tasmanian whisky from Hobart, the newest addition to its core range, in a 500ml bottle. It follows traditional solera methods, and only a portion of each release is bottled so that the fractional marriage can carry on and batches stay consistent. The nose is led by dates, raisins, red fruit and toffee apple, with light melon, vanilla and a little tobacco. The palate is rich, syrupy and chewy, with jam, pastry, wine gums, honeycomb, dark chocolate and marmalade. The medium-long finish is savoury and slightly drying, with chocolate orange.
