J.J. Corry Bonders Edition Pajarete Sherry Cask (70cl, 58%)

This is an Irish single pot still whiskey from J.J. Corry, released as a Bonders Edition in a 70cl bottle. It is a single cask bottling, put together in close cooperation with the Irish whiskey bonder, and it comes at a cask strength of 58% with no colouring added. The whiskey matured in a Pajarete cask, a Spanish sweet wine cask from the Malaga family. The nose offers cassis, blackberry, spicy notes and the scent of sweet wine. On the palate, sweet wine character meets pot still spice, with cassis and butter crumble. The finish is long and spicy.
