J. Mattingly Double Staved is a 6-year-old Kentucky straight bourbon, bottled at 48% ABV without chill filtration in a 750ml bottle. The bourbon comes from Green River Distilling Co. in Owensboro and is made from 78% corn, 10% rye and 12% malted barley.
After six years in barrel, broken pieces of charred barrel stave are placed back into the barrels. This is the Double Staved process, and it increases the whiskey's contact with the oak.
The nose offers honey, vanilla, leather and fresh-sawn oak. The palate has chocolate, toasted pecans and gentle rye spice, and the finish is medium-long with toasted oak and cocoa.
