A Bottled in Bond straight rye whiskey from the James E. Pepper Distillery in Lexington, Kentucky. It is made from a mashbill of 100% rye and bottled at 50% ABV (100 proof).
It was matured for a minimum of four years in new Kentucky oak barrels, in line with the Bottled-in-Bond Act of 1897.
The nose is dark chocolate, peppermint and toasted oak. On the palate, chocolate and peppermint meet wildflower honey. The finish is smooth, with lingering spicy-sweet notes.
