Kaiyo Cask Strength (70cl, 53%)

Kaiyo Cask Strength is a Japanese whisky bottled at 53% in a 70cl bottle, matured for eight years in Mizunara oak casks. The oak must be at least 200 years old before it can be worked into barrels at the cooperage. Kaiyo means 'ocean' in Japanese, and the name fits: after maturing in Japan, the whisky travels by sea to the UK, where it is bottled. The nose is floral and honeyed with fresh fruit and hints of nutmeg and clove, and the finish is long with spiced wood.
