Kaiyo The Rubi (46%)

The Rubi is a Japanese malt whisky from Kaiyo, released as part of the brand's special cask finish series and bottled at 46% abv without chill filtration. It spends three years in Japanese Mizunara oak, then travels by sea for three months, as all Kaiyo whiskies do. Back in Japan it ages a further seven years before a four-month rest in former Ruby port pipes. The nose offers candied orange and toasted marshmallow, with sandalwood and mango behind. On the palate come dark chocolate and peppermint with a rich viscosity, leading into a long finish.
