Kingsbarns – Doocot (70cl, 46%)

Doocot is the flagship bottling from Kingsbarns, at 46% ABV, in a 70cl bottle. It takes its name from the battlemented dovecote that is the distillery's landmark, and it replaces the earlier Dream to Dram. The recipe of ex-bourbon casks and STR barriques is unchanged, but the casks used are now at least seven years old. The result is a soft malt with tropical fruit and vanilla. The nose is sweet and floral, with soft brown sugar, banana cake batter and tropical notes. The palate offers pineapple syrup, summer berries and a hint of rhubarb, and the finish brings kiwi and citrus peel.
