Kingsbarns – Doocot (46%)

Kingsbarns Doocot is the signature single malt from the Kingsbarns distillery in the Lowlands, bottled at 46% ABV. It is non-chill-filtered and has no added colour. It combines whisky matured in bourbon casks with whisky from STR red wine barriques, in a ratio of roughly 90 to 10. Doocot is the Scots word for a dovecote, a nod to the old one on the farm where the distillery stands, and doves appear on the bottle. The nose is sweet and floral, with brown sugar, banana cake and tropical notes. The palate brings pineapple and syrup, summer berries, a hint of rhubarb and spice. The finish is kiwi with citrus.
