Knob Creek Rye 7 Year Old (70cl, 50%)

This is a seven year old straight rye from Knob Creek, made in Kentucky. The recipe pairs rye with a high share of corn, which gives a spicy whiskey that also leans on sweet cask notes, a little like a bourbon. It matures in heavily charred casks and is bottled at 50%, or 100 US proof, without chill-filtering or added colour. The nose brings caramel and vanilla with deep, rounded rye spice, plus apple, floral notes and a touch of leather. The palate is full, with black pepper balanced against sweet vanilla and caramel, then oak and rich spice. The finish is warm and soft, with the spice staying present throughout.
