Koval – Organic Bourbon Whiskey (50cl, 47%)

This is an organic single barrel bourbon from Koval of Chicago, in a 50cl bottle. The mash is 51% corn and 49% millet in place of rye or wheat, and only the heart cut of the distillate is used. It matures in new, charred American oak barrels from Minnesota that hold 30 US gallons, and each bottle comes from a single barrel. It is bottled at 47%, unfiltered and without added colour. The nose offers sour tropical fruit, gentle sweetness, pepper and melted butter. The palate is sweet and starchy with a slightly chalky texture, mango chutney and vanilla. The finish is powdery, with dried fruit, sulphured apricot and pepper, ending in warming peppery caramel and a note of tobacco and clove.
