Koval White Rye is an unaged American whiskey made from 100% rye grain at Koval Distillery in Chicago, Illinois. It is bottled at 40% in a 75cl bottle and won a gold medal for white whiskey at the 2010 American Distilling Institute awards.
The distillery uses a heart cut, keeping only the middle portion of each run, a method rooted in Austrian brandy-making. The spirit spends barely any time in contact with oak.
The nose is floral, with vanilla, cinnamon and a little caramel. The palate is clean and slightly peppery, with lemon zest, honey and maple alongside building rye spice. The finish is medium and dry, with white pepper and lemon peel.
