Ruby Abyss No.285 is a Tasmanian single malt from Lark Distillery's Signature collection, bottled at 43% in a 70cl bottle.
It was matured entirely in first-fill vintage Port and Sherry casks from Seppeltsfield Wines, drawing on a century-old Australian Port reserve.
The nose brings pears steeped in aged dessert wine, amber raisins, caramelised Demerara sugar and a hint of salted macadamia. Plum preserve and chocolate sauce run through the palate, with buttery croissant and a touch of earthy peat. The finish is warm with fortified oak and spiced golden treacle, leaving candied quince and a velvety depth.
