The Christmas Cask (2022) is a single malt whisky from Lark Distillery, bottled at 44%. It is a collaboration between Tasmanian artisans: Patisserie Jean Pascal, whose fruit mince pies play a part, Frogmore Creek Wineries, whose red wine barrels are used, and Head Distiller Chris Thomson. Fortified tokay notes add depth to the character.
The nose offers vanilla custard, brown sugar baked apples and Christmas spices of clove, nutmeg and cinnamon. The palate brings butter toffee sauce, plum pudding and fresh gingerbread. The finish is long and rich.
