Lark The Christmas Cask is a 2025 Tasmanian single malt, in a 50cl bottle at 43% ABV. It was aged in Port and Sherry casks, then finished in red wine barrels infused with fruit mince pie jus from Jean Pascal Bakery.
Baked rhubarb pie, Christmas pudding and brandy butter come through on the nose, with mulled wine spices and cranberry shortbread. The palate brings caramel, creamy coconut, gingerbread and marzipan, and the long finish recalls fruit mince pie, cinnamon buns and peanut brittle.
