Larsen Aqua Ignis is a cognac from Maison Larsen, matured in steam-toasted oak barrels. Each 225 litre French oak cask is plunged into hot water and toasted over fire three times, which brings out roast and browning flavours without harsh smoke or tannin. It has no age statement and is bottled at 42.3% ABV in a 75cl bottle.
The nose combines candied fruit, mocha-coated coffee beans, dark chocolate and burnt orange zest, with soft vanilla and brioche. The palate is silky, with spiced raisin, plum, milk chocolate and almond nougat, and a little cinnamon and clove. The finish is long, with vanilla sweetness, oak spice and toasted nuts.
