Maestro Dobel Pavito is a specialty blanco tequila from Jalisco, Mexico, made from 100% Blue Weber agave. During distillation, a roasted turkey breast is suspended in the still, adapting a rare Oaxacan mezcal technique into a tequila framework. The result is an unaged blanco with subtle savory, herbal and gently smoky complexity over clean agave, with added layers of umami, herbs and soft smoke. It is a limited, experimental-style release. On the nose there is fresh agave, citrus peel, herbs and a faint savory note. The palate is clean and layered with agave sweetness, light smoke, herbal complexity and subtle umami. The finish is smooth and slightly savory with lingering citrus, spice and delicate earthiness.
