Maestro Dobel Tahona Blanco (40.5%)

Maestro Dobel Tahona Blanco is an organic blanco tequila from Mexico, bottled at 40.5% abv. It revives the traditional tahona method, in which a large volcanic stone wheel crushes agave hearts that have been cooked in masonry ovens. The juice and fibres ferment together for six to seven days in open-air, wood-lined vats using wild yeast, and the spirit is then double-distilled in small copper pot stills. The nose is cooked agave, lemongrass and a cool hint of eucalyptus. The palate is clean and fresh, with agave sweetness, white pepper and green citrus tones, and the finish is dry and lightly herbal with lingering pepper.
