Mellow Corn is a straight corn whiskey from Heaven Hill Distillery. It is distilled from a mash of at least 80% corn and aged for four years in a once-used Bourbon barrel.
Because the barrel has been used before, the spirit stays a lighter, straw colour rather than taking on the deep amber of whiskey matured in new charred oak. Few distilleries still make this style of whiskey.
