Montelobos Ensamble is a joven mezcal made in Santiago Matatlán, Oaxaca. It is a blend of two certified organic agaves, mostly Cupreata with a touch of Espadin, distilled twice in copper pot stills.
The agave grows for at least ten years and is cut by hand with a machete. It is cooked for four to five days in traditional stone-lined earth ovens, then crushed on a stone tahona pulled by a mule called Rambo. Fermentation in open clay vats with native yeasts lasts about a week, slightly shorter than usual, so the vegetal side of the agave comes through ahead of the smoke.
The nose shows agave with hints of fermentation and a light smokiness. The palate is complex and balanced.
