Montelobos Mezcal Joven

Montelobos Joven is a mezcal certified organic, made at a distillery set among agave fields near Santiago Matatlán in Oaxaca. The brand was founded in 2011 by Ivan Saldaña, an agave specialist. It is made from Espadín agave, left to ripen for ten years and harvested by hand. The hearts are cooked in an earthen pit over embers and volcanic stones, covered with palm leaves and smoked for five days. They are crushed with a stone tahona, and the juice is fermented and distilled twice in a small copper still.
