Nc'Nean Quiet Rebels – Amy (48.5%)

This is an organic single malt Scotch whisky from Nc'Nean in the Highlands, bottled at 48.5% ABV. It belongs to the Quiet Rebels series, in which each whisky reflects the tastes of a member of the distillery team and is shaped by cask and yeast experiments. It is non-chill-filtered and of natural colour. Amy, Nc'Nean's head of sustainability, likes fruity, jammy flavours with a touch of toasted spice. Her whisky was matured in STR red wine casks, bourbon barrels and organically grown Maury casks. Maury is a French fortified sweet wine made in a manner similar to port. It is described as having lemon curd, plum jam and brown butter muffins on the nose.
