Amy is an organic Highland single malt from Nc'nean, part of the Quiet Rebels series. It is bottled at 48.5% in a 70cl bottle, without chill filtration.
The whisky is vatted from three cask types: 63% STR red wine casks, 19% ex-Maury casks and 18% ex-bourbon casks. The Maury casks come from a small biodynamic vineyard in southern France, where a fortified wine similar to port is made. The spirit is unpeated.
The nose brings rhubarb and custard sweets, damson plum and lemon zest, with brown butter muffins and toasted walnuts beneath. On the palate come red currant and cherry jam, dark chocolate, orange zest and pepper. The finish is medium-long, with raw pastry, toasted oak, honey and a flash of citrus.
