Nikka Discovery Yoichi Aromatic Yeast Single Malt 2022 (70cl, 47%)

A single malt from Nikka's Yoichi distillery, bottled in 2022 at 47% in a 70cl bottle. It is made with an aromatic yeast and a low-temperature fermentation, an approach that recalls the fruity, floral character of Ginjo sake while keeping Yoichi's typical peaty style. Pale gold in colour. The nose begins with herbaceous, salty peat, then opens to apple, pear, melon, lily, carnation and mint, later turning creamy and tropical. The palate is firm and lively, with barley, sea spray, earthy peat and plum. The finish is long and crisp, with white grapes and a fine coating of liquorice.
