Yoichi – Discovery Aromatic Yeast 2022 (70cl, 48%)

Yoichi Discovery Aromatic Yeast is a Japanese single malt from the Yoichi distillery, in a 70cl bottle at 48% ABV. This is the 2022 edition, and it is a peated whisky. What sets it apart is the fermentation. An aromatic yeast is fermented at a low temperature, which brings out esters, the volatile compounds behind floral and fruity aromas. That approach links it to ginjo sake, a traditional Japanese drink known for floral and fruity notes. It is produced in small quantities.
