This is a Yoichi single malt from Nikka's Discovery series, bottled in 2022 at 47% ABV in a 70cl bottle. It is made with a particular yeast and a low-temperature fermentation, which brings the fruity and floral character of Ginjo sake to mind, and it returns to the typical Yoichi style of changeable, multifaceted peat.
In colour it is pale gold. The nose opens with herbaceous, salty peat, then moves to apple, pear, melon, lily, carnation and mint, later turning creamy and tropical. The palate is firm and lively, with barley, sea spray and earthy peat, followed by plum and greengage. The finish is long and crisp, with white grapes, liquorice and a trace of smoke.
