Ontake – First Edition (70cl, 43%)

This is the first edition of a Japanese single malt from the Ontake Distillery, bottled at 43% in a 70cl bottle. It was matured in first fill solera sherry butts. The distillery was founded in 2019, on the hills of the Satsuma peninsula at around 400 metres. It works with soft local water from the Kagoshima region, yeast it grows itself and unpeated malted barley, and it selects older sherry casks with care. Behind it stands its parent company, Nishi Sake Brewery, which brings roughly 180 years of distilling experience.
