Pearse Distiller's Choice 7 Year Old is a blend of Irish grain and malt whiskies, hand-selected by the head distiller and bottled at 43% ABV in a 750ml bottle. It comes from the Pearse Lyons Distillery at St. James in Dublin, and the blend includes the distillery's own single malt.
Most of the whiskey matured in ex-bourbon barrels, with a smaller part from sherry casks.
The nose offers fresh citrus, subtle spice and dried fruits with a light fruit-cake note. The palate is smooth and warm, moving from light oak and green grape to caramelised pear, cocoa and dried fruits. The finish is medium to long and gently spiced, with stewed apple, clove and custard.
