Pearse Distillers Choice is a 7 year old blended Irish whiskey, made from grain and malt whiskeys. It includes the distillery's own single malt.
Most of the whiskey has matured in ex-Bourbon barrels, with Kentucky barrels coming from a sister distillery in Lexington. A small amount of sherry barrel whiskey is added to the blend.
The nose brings citrus and dried fruit. On the palate there are light oak, green grape, caramelised pear and cocoa, with more dried fruit. The finish carries stewed apple, clove and custard.
