Pearse Lyons 12 Years is an Irish whiskey in a 70cl bottle, made from malted and unmalted barley and aged in ex-bourbon casks for a minimum of 12 years. The St James's distillery in Dublin was founded by Dr Pearse Lyons. Its Kentucky copper stills, named Molly and Lizzie, give a distillation method set up by Lyons himself. The nose has white peach blossom, apple and spiced pear. The palate brings lemon and dried orange with a touch of honeysuckle, and the finish is medium to long with warm ginger and cloves.
