Pearse Lyons 7 Years is an Irish whiskey in a 70cl bottle, made from malted and unmalted barley. It is matured for a minimum of seven years in a mix of ex-bourbon and ex-sherry casks. The St James distillery in Dublin was founded by Dr Pearse Lyons and distils on a pair of Kentucky copper stills called Molly and Lizzie. The nose brings fresh citrus, balsamic spice and dried fruit. On the palate come oak and unripe grape, with caramelised pear. The flavour moves through dried fruit towards stewed apple, cloves and custard.
