Pierre Ferrand Réserve Double Cask is a Grande Champagne cognac from Maison Ferrand in Jarnac. It revives a 19th century technique of finishing cognac in casks that once held Banyuls, the French fortified dessert wine.
The eaux de vie come from Grande Champagne, are double distilled in copper alembic stills and aged for 7 to 10 years in small Limousin oak barrels. A portion of 20 year old Grande Champagne cognac is blended in before roughly 12 months in the former Banyuls casks. The finish brings a pronounced rancio character of cocoa, leather, tobacco and walnuts. It is bottled at 42.3% ABV.
