Ransom Old Tom Gin (44%)

An Old Tom gin crafted in Oregon by Ransom Spirits in collaboration with historian David Wondrich, resurrected from a 19th-century recipe. It begins with a malted barley-based wort combined with corn spirit infused with six botanicals: juniper, orange peel, lemon peel, coriander seed, cardamom pods and angelica root. These are co-distilled in a copper pot still, and the heart of the hearts distillate is aged three to six months in barrel before bottling. The gin is rich and silky, with malt-forward depth, lively citrus zest and exotic coriander notes. It is suited to classic pre-Prohibition cocktails such as the Martinez, Tom Collins or Martini, and can also be served neat or with large ice. Aromas lead with seductive juniper and coastal forest notes into apothecary spices, layered over gentle malt sweetness. The finish is warm, elegant and long, with clean, focused botanicals.
