Rare Stash Bourbon #3 is a Kentucky straight bourbon made in collaboration with Dustin Poirier. It blends whiskey from 25 barrels, some nine and some five years old, all aged in Char #3 oak barrels. Both have a 78/13/9 mash bill, and the bourbon is bottled at 96 proof, or 48% ABV.
The nose offers vanilla, rich oak, honey and maple. On the palate come bold caramel and oak with butterscotch, citrus, maple and cinnamon. The finish is lingering honey and coriander, with brown sugar and spice.
