Redemption Sur Lee Straight Rye Whiskey

Redemption Sur Lee is a straight rye whiskey made with a method inspired by French sur lie winemaking. The mash bill is 95% rye. The backset from the still, called the whiskey lees, goes into the barrels before ageing, and the barrels are rotated periodically so the lees and whiskey keep interacting. It is non-chill filtered before bottling. The whiskey is floral at the front, with a nutty backdrop, buttery notes of toasted marshmallow, maple and nutmeg, and a lingering spicy finish.
