Redwood Empire Pipe Dream Bourbon Whiskey (70cl, 45%)

Pipe Dream is a bourbon from Redwood Empire, blended from bourbon casks from California, Indiana and Kentucky. The youngest of them has matured for at least four years. The grain recipe is 73% corn, 18% rye, 5% malted barley and 4% wheat. It is bottled at 45% in a 70cl bottle, chill-filtered and without added colour. The name comes from a coast redwood in Humboldt Redwoods State Park, one of the trees the brand dedicates its bottlings to. The nose is led by sweet maple syrup and vanilla with a hint of honey. The palate is rich and layered, with toasted pecans and vanilla alongside lasting charred wood. The finish is smooth, with a touch of black pepper.
