Redwood Empire Pipe Dream Cask Strength Bourbon (75cl, 58.4%)

This is a barrel-proof bourbon from the Redwood Empire range, made by Graton Distilling Company in Sonoma County, California. It is bottled at 58.4% ABV (116.8 proof) in a 750ml bottle and is not chill-filtered. The blend uses bourbon aged four to twelve years, distilled in California, Indiana, Kentucky and Tennessee, then aged along the Northern California coast. The mashbill is 74% corn, 20% raw rye, 4.5% malted barley and 1.5% wheat. The cool, foggy climate keeps the strength lower than is usual for a cask-strength bourbon. The nose has toffee, ripe cherry and worn leather. The palate offers cherry cola, honey, butterscotch, pecans, black fig and orange marmalade. The finish is medium to long, with toasted walnuts.
