Romano Levi Grappa di Barolo is a grappa distilled in a single pass over an open fire at the Levi distillery in Neive, in the Langhe, founded in 1925. It is made only from Nebbiolo da Barolo pomace, taken from DOCG vineyards in Barolo, La Morra, Serralunga and Grinzane Cavour, and cured in underground pits before distillation.
The grappa is then aged for at least four years in traditional Piedmontese 220-litre acacia casks. It has a medium amber colour, with tobacco and chocolate on the nose, a dry and well-balanced palate, and a finish of wood and spices.
