Ruinart Blanc de Blancs Brut (75cl, 12.5%)

A non-vintage Brut Champagne from Maison Ruinart, founded in 1729, made entirely from Chardonnay. The grapes come mainly from the Côte des Blancs and Montagne de Reims and are fermented in stainless steel, with 20 to 30 percent reserve wines in the blend. After the second fermentation the wine ages for two to three years in the house's chalk crayères. The nose begins with lime zest and chalk, moving to yellow apple, pear and white peach, with jasmine, acacia and a touch of brioche. The palate has a creamy mousse, apricot and lemon peel, then almond pastry, held by lively acidity. The finish is medium-long, with chalk, soft smoke and baking spice.
