Sanctuary Signature Edition is a Canadian single malt from Fermentorium Distilling Co. in Victoria, British Columbia. It is made entirely in-house from 100% B.C.-grown barley, which is malted, mashed, fermented and distilled on site. It is bottled at 42% ABV in a 75cl bottle.
The 2026 release marries whiskies matured for 6 to 9 years in Bourbon, red wine and Phillips beer casks.
The nose is rich, with toffee, ripe fresh fruit and a hint of clove. The palate adds vanilla, pepper and clove alongside charred oak, with a creamy, leathery texture. The finish is short and warming, with lingering pepper, gentle oak and a trace of coastal sea air.
