This is a 9 year old Islay single malt from Caol Ila, bottled by Signatory Vintage in a 70cl bottle as part of its Single Cask Finish series. It was distilled in 2011 and is a limited single cask edition.
After maturation it spent 21 months finishing in a red Burgundy wine cask. It was bottled without chill filtration.
The nose is earthy peat smoke with red berries and damp oak, plus a touch of cured meat and dark cherry. The palate is ashy, peppery and juicy, with grilled plum, raspberry, sea salt, smoked herbs and dry spice. The finish is long, as the smoke fades into tart cherry skin, wine tannins and a hint of brine.
