Sliabh Liag – Silkie, The Legendary Midnight Irish Whiskey (70cl, 46%)

Silkie, The Legendary Midnight is a blended Irish whiskey from Sliabh Liag in County Donegal, bottled at 46% in a 70cl bottle. Its name comes from the folklore of the Donegal coast, where seal-people were said to shed their skins to walk on land. It combines malted and unmalted barley with Irish grain whiskeys, with triple distillation in copper pot stills. It matured in bourbon, sherry and virgin oak casks and is bottled without chill filtration. The nose is sweet malt, fresh apple and honey with a maritime hint and gentle smoke. The palate is velvety, with dark chocolate, malted biscuit, caramel, dried fruit and a touch of spice. The finish is long and warming, with honey, oak spice and smoky sweetness.
