Starward Botrytis is an Australian single malt from the distillery's Projects programme, which is given over to experimental bottlings. It was matured for 7 years in Botrytis Semillon dessert wine casks, some of them charred and some left in their original state, and bottled at 48%.
The casks give sweet, smoky, vanilla-led flavours. The nose brings honeycomb and peppermint with Christmas cake, glazed cherry, rum and raisin ice cream, orchard fruit and burnt orange. On the palate come vanilla cupcakes, raisins, fruit bread and cinnamon buns, with chewy caramel. The finish is very long, with glazed cherry, rum, raisin and a little mint.
