Starward Nova is an Australian single malt from the Starward range, bottled at 41% ABV in a 70cl bottle. It is matured in casks that previously held Australian red wine.
The casks come straight from wineries making Shiraz, Pinot Noir and Cabernet, and are only lightly charred or steamed before filling, so the character of the wine shapes the spirit.
The nose is full of red fruit, with strawberries and a Port-like mix of fruit and nuts. Honey, cinnamon and more red fruit follow on the palate, with a creamy, nutty texture and a touch of tannin. The finish is toffee with walnuts.
