Stauning Curious Peated Rye is an unaged white spirit from Stauning distillery in West Jutland, bottled at 43%. It is the unmatured heart of the distillery's rye whisky, the kind of spirit often called white dog or new make. It is made from locally floor-malted barley and rye, with local peat, heather and water, and distilled twice in pot stills heated over open fire. It is likened to mezcal or some grappa, but sweeter and full-bodied, and is suggested for cocktails or as a stand-in for vodka.
