Stauning Smoke is a mildly smoked Danish single malt from Stauning in West Jutland. The distillery was started in 2005 by nine friends, among them a doctor, a cook, a butcher and a helicopter pilot, who began with two small pot stills in a disused slaughterhouse. The whisky is made from West Jutland barley malted on an open floor, then smoked over locally harvested peat and heather. It is double distilled in small pot stills over open fire and matured in first fill wine and spirit casks.
